Flank Steak
Lean, fibrous cut from the abdominal muscles, excellent for grilling and marinades
Package: 1-2 lbs per steak
Sirloin Tip
Versatile cut from the rear leg, can be cut as roasts or steaks
Package: 3-4 lbs per roast, 1.5 lbs per steak
Notes: Can be processed as roasts or steaks per customer preference
Rounds
Large cuts from the rear leg, can be cut as roasts or steaks, lean and economical
Package: 4-5 lbs per roast, 1.5-2 lbs per steak
Notes: Round steaks can be tenderized or left untenderized per customer preference
Sirloin
Premium steaks from the rear of the short loin, tender and flavorful
